On this new quest, I've decided to start finding recipes that I can eat so I won't get discouraged with eating raw fruits and veggies everyday. Here's a modified recipe of Black Bean Burgers that I got from a great friend, Athena.
Black Bean Burgers
- 1 15 oz can Black Beans, drained and rinsed
- 1 T. olive oil
- 1 cup Corn
- 1-2 tsp. chopped Garlic (go heavy)
- 1/2 cup finely chopped Onions
- 1/4 tsp. Cumin
- 1- 6 oz. can green chile sauce (about half)
- 2 T. Salsa (any kind)
- 1 1/2 tsp. Chili Powder
- 1/2 cup Flour (I used my All purpose gluten free flour)
- 1 cup cooked Quinoa ( or 1/2 cup breadcrumbs)
- In a saucepan saute' onions and garlic until translucent add cumin and green chili sauce cook 2-3 mins.
- In a large bowl, smash beans. Add in the salsa, chili powder, corn, flour & Quinoa and sauce
- Get your hands in there and smash together then form into patties 4-6 on wax paper
- Fry in a non-stick pan until they are golden brown and toasty.
Serve with lettuce, on a bun, or however. They are sooooo good!!
