Black Bean Burgers

So, this No Sugar, Wheat, Dairy, Peanuts (and other things) diet can actually be pretty tasty. I've found also that I feel a TON better. Someone told me the other day that since I've lost all this weight I now look like a high school and "Clean" Haha! What does that mean? I'll take it though.

On this new quest, I've decided to start finding recipes that I can eat so I won't get discouraged with eating raw fruits and veggies everyday. Here's a modified recipe of Black Bean Burgers that I got from a great friend, Athena.

Black Bean Burgers

  • 1 15 oz can Black Beans, drained and rinsed
  • 1 T. olive oil
  • 1 cup Corn
  • 1-2 tsp. chopped Garlic (go heavy)
  • 1/2 cup finely chopped Onions
  • 1/4 tsp. Cumin
  • 1- 6 oz. can green chile sauce (about half)
  • 2 T. Salsa (any kind)
  • 1 1/2 tsp. Chili Powder
  • 1/2 cup Flour (I used my All purpose gluten free flour)
  • 1 cup cooked Quinoa ( or 1/2 cup breadcrumbs)
  1. In a saucepan saute' onions and garlic until translucent add cumin and green chili sauce cook 2-3 mins.
  2. In a large bowl, smash beans. Add in the salsa, chili powder, corn, flour & Quinoa and sauce
  3. Get your hands in there and smash together then form into patties 4-6 on wax paper
  4. Fry in a non-stick pan until they are golden brown and toasty.
Serve with lettuce, on a bun, or however. They are sooooo good!!
